Super Moist Almond Flour Strawberry Cake [Gluten FREE]

A healthier and different version of the traditional cake. This super moist almond flour strawberry cake is incredibly juicy and has flavors you’ll never forget. Super Moist Almond Flour Strawberry Cake [Gluten FREE]

Preparation time: 20 minutes

Temperature: 350oF

Baking time: 35 to 45 minutes

Super Moist Almond Flour Strawberry Cake



  • 6 eggs [at room temperature]
  • 1/2 cup granulated sugar
  • 1 teaspoon of pure vanilla extract
  • 1 1/4 almond flour
  • 1 tablespoon coconut flour [If you don’t have coconut flour, you can replace it with 1/4 cup almond flour]
  • 1 teaspoon of baking powder
  • 1/4 teaspoon salt
  • 2 cups of sliced strawberries to decorate [Or any other fruit if you prefer]


  • 4 ounces mascarpone cheese
  • 1/4 cup heavy whipping cream
  • 3 tablespoons powdered sugar

Soak to moisten the cake [Optional]

  • 7 ounces of condensed milk
  • 12 ounces evaporated milk
  • 3 cinnamon sticks or a teaspoon of cinnamon powder.



  • Grease and flour a baking sheet.
  • With an electric mixer, whip the egg whites until stiff and set aside.
  • Beat the egg yolks, 1/2 cup sugar, and vanilla until smooth.
  • Whisk together the dry ingredients (flour, baking powder and salt)
  • Incorporate the dry ingredients into the egg yolk mix and beat.
  • Lastly, add the egg whites to the mixture and gently beat until incorporated.
  • Pour the cake batter into a previously greased and floured baking pan.
  • Bake for approximately 30 to 35 minutes. Insert a toothpick and if it comes out clean, that means it’s done.
  • Let it cool down.


  • In an electric mixer, whip the mascarpone cheese, cream, and powdered sugar. 
  • Cover the top of the cake with this icing.
  • Decorate with the sliced ​​strawberries

Cake Soak

If you want to soak the cake, place the it in a deep bowl

  • Bring the milk with the cinnamon sticks to a boil. Stir often while cooking so that the milk does not stick to the bottom of the pan.
  • Let it cool down completely and pour it around the cake to moisten it.
